Chinese Takeout...Alabama Style!
In honor of the recently held 2008 Beijing Olympics and renewed interest in Chinese culture, the following meal idea is a way to experience an Asian meal while at the same time utilizing our safe and delicious Alabama products.

| Fried Rice | |
| 1 onion, diced 1 1/3 cups chopped Alabama veggies (corn, peas, carrots) | 3 cloves garlic, finely chopped 4 large eggs, lightly beaten 4 cups cold cooked China Doll rice |
| Heat a large skillet over high heat. When hot, add 1 tablespoon of oil. Add onions to pan, season with salt and pepper and cook for 1 to 2 minutes until onion. Add vegetables and garlic and cook approximately 5-7 minutes. Transfer contents of skillet to a large bowl. Return pan to heat and add 2 more tablespoons of oil. Add the eggs and season with salt and pepper. Stir the eggs constantly and cook until almost set but still moist, then transfer egg to the bowl. Break the eggs up with a spatula. Return the pan to the heat and add the remaining oil. Add the rice to the pan and use a spoon to break up any clumps. Season with salt and pepper and stir-fry the rice to coat evenly with oil. Stop stirring, and then let the rice cook undisturbed until it gets slightly crispy, about 2 minutes. Stir the rice again, breaking up any new clumps. Transfer to bowl, stir all ingredients together with the rice. Serve. | |
| Beef Stir-Fry | |
| ¾ - 1 lb. flank steak ½ cup stir-fry sauce (recipe follows) 2 cloves garlic, chopped | 3 tablespoons canola oil 3 - 3½ cups stir-fry vegetable mix |
| Use a knife to cut steak into thin slices, or buy already cut into fajita strips. Heat a large skillet over medium-high heat. Add 2 tablespoons of oil into skillet, tilting the pan so that it coats the sides. When the oil is hot, add half of the chopped garlic. Stir-fry for 10 seconds and then ad the beef. Lay the beef in the pan and let it brown briefly until it loses its redness and is nearly cooked through. Remove the stir-fried beef and drain in colander. Heat 1 tablespoon oil in the same skillet. When the oil is hot, add the remainder of the garlic. Stir-fry for 10 seconds, and then add vegetables. Stir-fry for 3-5 minutes. Splash the vegetables with a bit of water if the vegetables begin to dry out while you are stir-frying. Add the stir-fried beef back into pan. Add stir-fry sauce and bring to a boil. Stir-fry for 1-2 more minutes to mix everything together. Serve hot over fried rice. | |
| Stir-Fry Sauce | |
| 2-3 tbsp Cornstarch ¼ cup brown sugar ¼ tsp. ground ginger 2 cloves garlic ¼ cup soy sauce | ¼ cup Moore's Teriyaki Marinade ¼ cup white vinegar ½ cup water 1½ cup vegetable broth |
| Combine ingredients in large glass jar with a lid. Shake well. Add 1/2 cup to stir-fry, bring to boil for 1 minute or until slightly thickened. | |
| Chocolate Dipped Fortune Cookies | |

| Heat handful of chocolate chips in microwave for 1 minute. Dip large side fortune cookie in chocolate. Place on wax paper in refrigerator for approximately 1 hour or more. Enjoy! | |
