Mamie's Cheese Wafer Crisps with Alabama Goat Cheese Mousse
1 pkg Mamie's Cheese Wafers
3 oz Belle Chevre Goat Cheese
1/2 Plain Yogurt
2 tbsp Barber's Heavy Cream
1 tsp Italian Seasoning Mix
Slice and bake Mamie's cheese wafers according to directions on package. Combine softened Belle Chevre goat cheese (3 oz), 1/2 cup plain yogurt, 2 tbsp Barber's heavy cream & 1 tspn Italian seasoning
Mix well. Add a dolop to each wafer or pipe out of bag.
Serve immediately.
Double Chocolate Covered Cherry Pie

2 c. semi-sweet chocolate morsels
1/2 c. Barber's whipping cream
1/4 c. butter (cut in pieces)
1 (6 oz.) chocolate crumb pie crust
1 (21 oz) can cherry pie filling
1 (8 oz) pkg. cream cheese-softened

1/3 c. powdered sugar
1 large egg
1/4 tsp. almond extract
1/4 c. Alaga Cane Syrup
16 Maraschino cherries with stems
2 c. thawed whipping topping

Microwave the chocolate morsels and cream in glass bowl 1-2 minutes or until chocolate begins to melt. Whisk in butter until smooth. Let cool, whisking occasionally, 5-10 minutes or to desired consistency. Spoon half of chocolate mixture into the pie crust. Cover & chill remaining chocolate mixture. Spoon cherry pie filling evenly over the chocolate mixture in pie crust. Place the pie crust on a baking sheet, and set aside. Beat the cream cheese and the next 4 ingrediants at medium speed with an electric miser until smooth. Pour cream cheese mixture over cherry pie filling mixture. (The pie crust will be full but contents will not overflow when baking.) Bake at 350 degrees for 30 minutes or until center is set. Remove from oven, and cool on a wire rack. Cover & chill for 8 hours. Drain cherries on paper towels and pat dry. Microwave the remaining chocolate mixture for 1 minute. Dip cherries into mixture and place them on a baking sheet lined with wax paper. Chill for 15 minutes. Spread the remaining chocolate mixture evenly over the pie. Spoon 8 dollops of whipped topping around outer edge of pie, and place 1 chocolate-covered cherry in the center of each dollop. Serve immediately.
